- 1lb fresh cherry tomatoes
- ½ jar Taggiasca olives by Roi
- ½ jar Vegan Pesto by Roi
- 5 tbsp EVOO Taggiasca by Roi
- A few handfuls of fresh arugula
- Salt to taste
Directions:
- Start by dissolving the sachet of yeast in lukewarm water. Then, add the flour mix and 6.5oz of lukewarm water. Knead the dough for a few minutes, and then cover it and let it rise for 1.5 hours.
- Once the dough has risen, flatten it out and place it on a baking tray.
- Halve the cherry tomatoes and arrange them on top of the pizza, along with the Taggiasca olives and dollops of vegan pesto. Drizzle with EVOO for extra crunch.
- Bake the pizza at 430°F for 30-40 minutes, or until the crust is golden and crispy.
- Once out of the oven, top your pizza with fresh arugula for a burst of freshness. Drizzle a little more EVOO on top to finish.
